Nathan Outlaw is a two-starred Michelin chef from England, specialising in the very best seafood, cooking with only the finest sourced ingredients. His style of cooking is one of simplicity but with complex flavour combinations using local, seasonal, responsibly sourced ingredients.

Peter Biggs has worked for Nathan Outlaw for 15 years, and is the newly appointed Head Chef of Nathan Outlaw at Al Mahara.

Already a fish specialist at The Compleat Angler, Peter worked under Nathan at many UK Michelin Star Restaurants such as The Vineyard and has stayed with him since. In 2009, He became Head Chef at the Nathan Outlaw Seafood & Grill and in 2012 as Head Chef helped open Outlaw’s at The Capital Hotel in London, which also became a Michelin starred restaurant.
